The Mourning-After Meal

Welcome to the Mourning-After Meal

Most people would have to do a double-take on the title of this Meal. No, this is NOT the morning after “sex” meal; on the contrary, this is the morning after a relationship break-up meal (hence the term/to mourn/, in reference to the dead.)

This will cure your illness. The aromas will fill your house. And, stay tuned for the Round 2 Dinner…

Don’t worry, one bite and you will transform from a once empty, weak human, to a fulfilled, determined, Fighter. Lena Mae’s Got your Back.

 

Poached Egg and Tomato Bruschetta

Recipe

Ingredients:

1 medium size Red Onion

2-3 Tbsp Extra Virgin Olive Oil (EVOO)

2 cups Diced Tomatoes (could use canned or fresh)

1 tsp basil

1 tsp oregano

½ Cup Cut Asparagus

B&G Bread & Butter Pickle Chips (about 10)

3 Eggs

1 loaf long French Baguette

2-3 tsp butter

2 tsp Garlic Bread Sprinkle or Garlic Powder

 

Instructions:

  1. Rough Chop Onion (while thinking of a better way to use this sharp knife… don’t hurt yaself!)
  2. Add EVOO to Cast Iron Pan (or sauté pan), let heat for about a minute and then add onion.
  3. When onions turn soft and brown, add tomatoes, basil and oregano, Stir.
  4. Add asparagus and Pickle Chips to this simmering concoction… Stir. (To Indulge, sneak a Bread and Butter Chip into your mouth… okay now back to the meal)
  5. Let this simmer for about a minute, then make 3 pockets where eggs will become suspended.
  6. DON’T BE SCURRED!! Crack eggs in a quick fashion against a hard surface, and it will release perfectly out of its shell and into place into “pockets”. Cover to protect this delicate and tender egg. (Reference to shielding yourself and transforming into a firm, tender, luscious being.)
  7. Slice French Baguette into 1”thick slices along a bias and place into broiler. (Turning when halfway through crispness)
  8. Straight out of oven, apply butter and Garlic to bread.
  9. Place Tomato/Egg Mixture on top of Garlic Infused Bread.

Cocoa Brownies

Put This in Your Mouth…

Now everyone knows I love a sweet treat every now and again and this is one of my favorites since I was a small boy. Now that I am grown I’ve added a twist of Bacardi Gold Rum to Alton Browns Classic recipe.  Your Gonna Love this one. I did. Thanks Alton!!!

Prep Time:15 min

Cook Time:1 hr 0 min

Serves:16 brownies

Ingredients

  • Soft butter, for greasing the pan
  • Flour, for dusting the buttered pan
  • 4 large eggs
  • 1 cup sugar, sifted
  • 1 cup brown sugar, sifted
  • 8 ounces melted butter
  • 11/4 cups cocoa, sifted
  • 2 teaspoons vanilla extract
  • 1/2 cup flour, sifted
  • 1/2 teaspoon kosher salt
  • 1 shot of Bacardi Gold Rum

Directions

Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.
In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it’s done, remove to a rack to cool. Resist the temptation to cut into it until it’s mostly cool.

Jamaican Style Ox Tails And Rice & Peas

Put This in Your Mouth…

This is one of my favorite dishes. Just typing this up to share with all of you is making me want to set myself up with a nice fresh pot of Oxtail’s and Rice & Peas. YUMMMMMMMMM!!!!! This is how I do it!!!

Ingredients


  • 3-4 lbs of oxtails
  • oxtail seasoning
  • 1 large onion
  • 1 can of beef stock
  • 1 cup of water
  • 1 garlic clove or 1 tablespoon chopped
  • 3 cups of carrots/celery mix
  • Smallest can of tomato paste
  • 1 cup of red wine vinegar or 2 cups of red wine
  • salt, pepper, thyme, bay leaf
  • Rice:
  • 2 cups of white rice
  • 1 can of pigeon peas
  • 1 package of Sazon seasoning

How to make it


  • Wash oxtails and put in baking dish-season and sprinkle with oxtail seasoning and marinate 2hours or overnight. Use a liberal amount of seasoning
  • In a fry pan, brown oxtails in 3 tablespoons of oil. Make sure to brown all sides add ½ of the onion (save the rest til the end) chopped and cook til onions are clear
  • In a large pot or dutch oven, add water, beef stock, red wine, salt and pepper bring to a simmer, add meat and cook for 2 ½ hrs. Add all remaining ingredients and simmer for another hour or until done. Remove bay leaf.
  • Rice:
  • Cook rice package directions only add coconut one can of coconut milk instead, when done, add pigeon peas and Sazon Seasoning, rice will turn orange, then yellow in color cook over low heat for 5 mins-til peas warm up
  • Serve oxtails over rice

Put this in Your Mouth!!!

Ingredients
1 pound spaghetti
1 pound lean ground beef
1/4 teaspoon salt
1/4 teaspoon ground black pepper
garlic powder to taste
1/2 cup chopped green bell pepper
1 (26 ounce) jar pasta sauce
3/4 cup sour cream
1/2 cup chopped green onions
1/2 (8 ounce) package cream cheese
1 1/2 cups shredded Cheddar cheese
Directions
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Preheat oven to 350 degrees F (175 degrees C).
In a skillet over medium heat, brown the ground beef. Drain and crumble. Put crumbled beef in skillet. Stir in salt, pepper, garlic powder, bell pepper and pasta sauce. Bring to a boil; reduce heat and simmer for 20 minutes.
In a small bowl combine sour cream, green onions and cream cheese and set aside. Coat a 9×13 inch baking dish with cooking spray and add the cooked spaghetti. Spread the cream cheese mixture over it, add the meat mixture and sprinkle with Cheddar Cheese.
Cover and bake for 25 minutes. Uncover and bake for 5 more minutes until the cheese is bubbly.
Delicious, filling and a cool alternative to regular spaghetti!
